- 1.5 kg magro de cerdo
- 1 cebolla cortada en dados pequeños
- 2 dientes ajo picados
- 2 hojas laurel
- 400 gr tomate triturado
- 1 chorro vino blanco o coñac
- Azúcar para quitar la acidez del tomate
- 250 ml caldo de ave o de carne
- Pimentón dulce
- Orégano
- Romero
- Sal y pimienta

- En una olla exprés añadimos un poco de aceite de oliva y vamos a marcar el magro, para ello calentaremos el aceite a fuego fuerte, añadiremos el magro y lo salpimentaremos.
Lo removemos bien hasta que se sellen todos los lados de los trozos del magro. - Retiramos el magro de la olla, freímos le ajo picado y cuando esté dorado añadimos la cebolla picada en trozos pequeños.
Añadimos el laurel, el orégano, el romero y sal y pimienta esto nos ayudara a que se poche la cebolla. - Una vez pochada añadimos el magro, el pimentón y un buen chorro de vino blanco o de coñac.
Evaporamos el alcohol y añadimos el tomate triturado.
El azúcar para quitar la acidez del tomate y el caldo de ave o de carne.
Probamos el guiso y lo ponemos a punto de sal. - Tapamos la olla y cunado empiece a salir el vapor bajamos el fuego a fuego medio y lo cocinamos durante 20 minutos.
Una vez pasados los 20 minutos y con la olla fría la abrimos y si queremos reducir la salsa sacaremos el magro para que no se sobre cocine. - Una vez reducida la salsa añadimos el magro y estará listo.
Si queremos podemos decorarlo con un poco de perejil.
