Ponemos agua hasta cubrir los tornillos, es momento de poner un poco romero molido (yo molí un poco y el resto lo puse por encima con la rama cuando está casi hecha la paella) y el colorante. Cocinamos a fuego alto 
- Cuando baje el agua por debajo de los tornillos probamos de sal y añadimos al gusto, ponemos el arroz en forma de cruz(la cantidad es hasta que asoma el arroz en el caldo por toda la cruz, luego esparcir bien por toda la paella con la paleta en círculos  
- Dejamos durante 1 minuto hervir el arroz a fuego fuerte y ya bajarlo al mínimo durante 15 minutos y vamos viendo durante este proceso que el arroz se haga y que se consuma el caldo, debemos jugar con el fuego para lograrlo, la cocción total del arroz son 17 minutos y dejar reposar con el fuego apagado 10 min y a comer.
