- 3 Huevos
- Pan rallado (cantidad necesaria)

- 1 Cebolla
- 1 Puerro (solo parte blanca)
- 1 Zanahoria
- 1 Morrón
- 2 Zapallitos
- 1 Berenjena

- Batimos los huevos con los condimentos y dientes de ajo bien picadito.   
- Pasamos los filetes por pan rallado y apretamos bien para que se pegue.

- Pelamos y limpiamos bien todas las verduras, cortamos en rodajitas finas la cebolla, puerro, morrón y zanahoria, y en gajos medianos e iguales las demás verduras, zapallitos, berenjena, y tomate. 
- Colocamos todas las rodajitas en una asadera bien aceitada y por encima los gajos de verduras. Le echamos unos hilitos de aceite y las llevamos al horno precalentado a 200ºC por unos 15 minutos. 
- Cuando notamos que comienzan a ablandarse las damos vuelta y colocamos los filetes empanados por encima, volvemos al horno unos 15 minutos. Retiramos, damos vuelta los filetes y colocamos las verduras por encima. Llevamos otros 15 minutos más al horno y listo!!! 
 Si desean lo pueden acompañar con un puré de papas o calabaza o arroz blanco, con las verduritas asadas por encima. Más sano imposible.
