- 30 grs Cebolla
- 50 grs Espinacas frescas
- 7 grs Aceite Oliva Virgen Extra
- 3 Huevos
- 10 grs Mantequilla
- al gusto Sal, Pimienta negra y Perejil
- 30 grs Emmental rallado
- 10 grs Frutos secos, utilicé Cacahuetes
Instructions to make to make Keto-Omelette de Espinacas y Emmental
- Pelamos y picamos Cebolla. La pondremos en una sartén antiadherente con los 7 grs de AOVE. Salteamos hasta que se ponga transparente. 
- Lavamos, secamos y cortamos a tiras las Espinacas (si son baby, no hará falta picarlas) y las incorporamos a la Cebolla. Cocinamos un par de minutos a fuego medio hasta que se ablanden. Reservamos en un plato.  
- En un bol cascamos los Huevos, añadimos la Mantequilla a cubos pequeños, Sal, Pimienta y Perejil. Batimos bien con unas varillas, y en la misma sartén donde hemos salteado las Espinacas, echamos la mezcla como si fuera una crepe. Cocinaremos a fuego medio, sin remover, hasta ver la parte inferior cocinada y la superior aún cruda.  
- Entonces añadiremos las Espinacas y el Emmental sobre el centro. Con una espátula doblamos los bordes hacia el interior y los pegamos con el queso. Tapamos la sartén y cocinamos unos minutos hasta que haya cuajado el interior de la Omelette.  
- Pasamos la Omelette a un plato y le añadimos los Frutos Secos por encima, y.... ¡¡Listo!!!! Ya tenemos el desayuno super nutritivo listo.... También es una receta ideal para llevar al trabajo en Tupper, ya que nos aporta los suficientes nutrientes para la jornada laboral... Espero que os guste... Y... ¡¡Hasta la próxima!!!!
