- Enjuagar las berenjenas y llevar a hervir colocando en la cacerola una taza de vinagre y el resto de agua hasta cubrirlas por completo. Cocinar a fuego medio durante 8/10 minutos. Dejar enfriar.
- Colocar en un frasco o recipiente previamente esterilizado aceite y vinagre y, posteriormente, alternar capas de berenjena con los condimentos que sean de su gusto. En mi caso por cada capa de berenjenas coloqué ajo picado, orégano, provenzal, pimienta y algunas hojas de laurel. Repetir hasta llenar los frascos o recipientes. Agregar aceite a medida que se colocan las capas ya que debe quedar cubierto. Dejar asentar y enfriar y tendrás una conserva lista para acompañar tus comidas!
