  2. Cortar en pluma las cebollas- Pelar y cortar las manzanas en gajos finos. Retirar las frutas del agua y cortar a la mitad.
  3. Colocar en un recipiente el aceite de oliva y la manteca con el diente de ajo, el estragón y el orégano fresco, agregar la cebolla, clarificar. Incorporar la manzana, y los condimentos. Agregar vinagre de manzana a gusto. Cocinar. Agregar la fruta seca hidratada, salsear, a medida que la cocción reduce el líquido, hidratar con el agua de las frutas secas. Agregar el azúcar. Llevar a punto salsa.
  4. En un recipiente verter aceite de oliva y poner a dorar las pechugas aderezadas con aceite, sal, pimienta, estragón, dorar por ambas caras.
    Cuando cocidas, rociarlas con el jugo de limón.
  5. Emplatar, unté la pechuga con jalea de manzanas.La menta es la mejor compañía en cualquier plato dulce o salado, pero ella cunde en mi huerta y yo la saludo con alegría cada día.
